Broccoli Crab Casserole 8 spears broccoli, cooked 2 cups sharp cheddar cheese, grated 10 tablespoons butter 1/4 cup onion, minced 1/4 cup flour 1/2 teaspoon curry powder 3/4 teaspoon salt 2 cups milk 1 tablespoon lemon juice 2 tablespoons sherry 12 ounces imitation crabmeat, thawed, flaked 1 cup soft bread crumbs Arrange broccoli in a greased shallow casserole dish. Sprinkle with grated cheese. Saute onion in 6 tablespoons of the butter until soft. Stir in flour, curry, and salt. Cook about 1 minute. Add milk gradually. Cook over low heat until thick, stirring constantly. Blend in lemon juice and sherry. Add crabmeat. Pour mixture over the broccoli. Melt the remaining 4 tablespoons of butter and combine with the breadcrumbs. Sprinkle over the casserole and bake at 350 degrees F for 30 minutes. Printable version: broccoli-crab.txt.
