No-bake wheat berry cake 500g (1 pound) wheat berries water pineapple juice 3 bananas 2 apples 2 oranges 4 pineapple slices 15 figs 15 prunes 2.5 dl (1 cup) whipping cream or heavy cream 2 tsp. sugar (optional) kiwi/blue grapes Soak the wheat berries in water for 24 hours. Pour out the water, let them soak in pineapple juice (add sugar if you like) for another 24 hours. Let the prunes and the figs (if you use dried figs) soak in water for 24 hours. Put the wheat berries in a colander, throw away the pineapple juice. Cut the fruit into small pieces. Mix the wheat berries and the fruit - make sure the mix isn't too moist. Put the mix in a mould where you can remove the sides - is it called a spring form? Press the mix down. Whip the cream, adding sugar/vanilla if you like. Put the whipped cream on top of the cake, decorate with kiwis or grapes. Let the cake rest for a couple of hours, before serving, then remove the sides of the mould. You can't cut slices of this cake, so you could make and serve it in a serving bowl, instead of a mould. Printable version: wheatberry.txt.
