Strawberry Layer Cake 3 1/2 cups flour 4 tsp baking powder 1 cup butter or margarine at room temperature 2 cups sugar 1 tsp vanilla 1 cup milk 8 egg whites 1/2 cup sugar 1/2 cup orange liquor 2 cups strawberries 3/4 cup powder sugar 1 pkg unflavored gelatin ( 2 1/4 tsp ) 1 1/2 Tbsp lemon juice 1 1/2 cups heavy cream 3 egg whites 3 pkg ( 8 oz ) cream cheese 1/2 cup heavy cream Enough powder sugar to taste extra strawberries for garnish (2 cups) chocolate covered strawberries for garnish, optional Cream butter and sugar until fluffy, add eggs and vanilla and blend smooth. Mix flour and baking powder and add alternating with milk. Beat whites until stiff not dry and fold into mixture. Divide mixture into 3, 10 inch greased and floured cake pans. Bake in a 375F oven about 20 minutes or until done. Cool in pan 10 minutes and remove to rack to cool. Heat sugar and liquor to a boil and remove from heat. Puree 2 cups of strawberries and blend in powder sugar. Dissolve gelatin in lemon juice. Heat puree with gelatin and lemon juice until gelatin is dissolved. Remove from heat to cool. Whip cream to soft peaks and fold into cooled puree. Beat whites stiff and not dry and blend into puree mixture. Brush tops of cake layers with some of the cooled glaze. Place a layer on serving plate and spread with some mousse. Add on some slice strawberries in a single layer.
