Sticky Ginger Cake 1/2 cup butter 1/2 cup brown sugar 2 eggs 1 cup molasses 2 cups flour pinch of salt 1 teaspoon ground ginger 3/4 cup golden raisins 1/2 teaspoon baking soda 2 tablespoons warm milk sweet butter Gouda or Swiss cheese Set oven at moderately low (325F). Grease and flour an eight-inch springform pan. Cream butter in a bowl, add sugar and beat until light and soft. Beat in the eggs, one at a time, and the molasses. Sift flour with salt and ginger and, using a metal spoon, fold them into the egg mixture with the golden raisins. Dissolve the baking soda in the milk and carefully stir into the cake mixture. Pour the mixture into the prepared pan and bake in heated oven for about 1 hour, or until a skewer inserted into the center of the cake comes out clean. Cool the cake in the pan, turn it out and cut into wedges. Spread these generously with sweet butter and insert a slice of Gouda or Swiss cheese.
