Raisin Spice Apple Cake

3 cups flour
2 cups sugar
1 cup mayonnaise (lite)
2 eggs
1/3 cup milk
1/2 tsp. each nutmeg, salt, cloves
3 cups chopped apples
1 cup raisins
1/2 cup nuts
2 tsp. baking soda
3/4 - 1 tsp cinnamon
dash of mace

Combine all ingredients except the apples, nuts and raisins.  Mix
low speed.  Dough is thick so a wooden spoon is needed to stir in
apples, nuts and raisins.

If the raisins are a bit dry, add about 1-2 Tbs. more of milk.

In bundt pan, bake 350 for 1 hour.  Dense and breadlike in consistency.
cool about 5 minutes and invert onto cooling tray.

Variations: Have substituted 1 cup of dry pears for 1 cup apples.
Dried plums, peaches, etc., will change the flavor just a bit.
Can use hazelnuts or walnuts.
