Quatre-quarts

3 eggs, weigh them and use an equal weight of sugar, flour and butter
Grated rind of 1 lemon

Preheat oven to 180C/350F/Gas Mark 4.

Separate the yolks from the egg whites.

In a bowl, beat the yolks with the sugar until the mixture is thick
and light and of a pale colour.

Fold in a little flour and softened butter, repeat the process
until blended.

Add in the grated rind of the lemon.

Whisk the egg whites until stiff.

With a metal spoon, carefully fold egg whites into the flour mixture.

Pour this preparation into a well-greased rounded mould (up to 2/3
of the height).

Bake, then increase the heat a little.

The baking time should be between 40-45 minutes or until the ga2teau
shrinks slightly from the sides of the mould.

Note: To check if the ga2teau is done, test with the point of a
knife. It should come out clean when removed from the cake.
