Plantation Cake 2 cups seedless raisins 2 cups chopped walnuts 1 pound cling peaches, drained, chopped 4 eggs, beaten 1 cup vegetable shortening 2 1/2 cups sifted white flour 1 cup brown sugar, packed 1 teaspoon baking powder 1/2 cup orange juice 1 teaspoon ground cinnamon 1 pound mixed candied fruits 1/2 Teaspoon ground cloves Grease a 9 inch bundt pan and dust lightly with flour. Pre-heat oven to 300. Combine raisins, peaches, shortening, sugar, and orange juice in medium pan. Heat just to boiling, remove from heat and cool. Add candied fruits and nuts to cooled mixture. Stir in beaten eggs. Sift dry ingredients together and stir into fruit mixture. Pour batter into prepared pan. Bake for 2 hours or until center springs back when lightly touched. Cool in pan on rack for 15 minutes. Turn out of pan and cool completely on rack. If desired, decorate with heated corn syrup, walnuts, and candied cherries. Makes one large bundt cake.
