Pink and White Marble Cake
Prepare 1 package Angel Food Cake Mix using package directions.
Tint 1/3 of batter pink with several drops red food coloring and
add 1/4 teaspoon peppermint extract. Spoon pink and white batters
alternately into ungreased 10-inch tube cake pan. Bke as directed
on package. Invert; cool. Prepare 1 package fluffy white frosting
mix according to package directions; tint pink with red food coloring.
Frost cake.
Fluffy White Frosting
1 cup granulated sugar
1/3 cup water
1/4 tsp. cream of tartar
Dash salt
2 unbeaten egg whites
1 tsp. vanilla
Combine sugar,water, cream of tartar, and salt in saucepan. Bring
to boiling, stirring till sugar dissolves. Very slowly add to
unbeaten egg whites in mixing bowl, beating constantly with electric
mixer till stiff peaks form. Beat in vanilla. Frost tops and sides
of two 8- or 9-inch layers, or 10-inch tube cake.
Pink Frosting
2 cups granulated sugar
1 egg yolk
3 Tbsp. strawberry flavored gelatin
1/2 tsp. cream of tartar
Dash salt
2 egg whites
1 tsp. vanilla
Combine sugar, wter, gelatin, cream of tartar, and slt. Bring to
boiling, stirring till sugar dissolves. Slowly add to unbeaten egg
whites, beating constantly with electric mixer at high speed till
stiff peaks form. Add vanilla. Frost tops and sides of two 8- or
9-inch layers.
Peppermint Frosting
Blend together two 3-ounce packages softened cream cheese, 2 Tbsp.
milk, and dash salt. Gradually add 5 cups sifted confectioner's
sugar, beating well after each addition. Stir in 1/3 to 1/2 cup
crushed peppermint-stick candy. Frosts 10- inch tube cake or
generously frosts tops and sides of two 8- or 9-inch layers. Decorate
with candy canes or crushed candy.
