Papaya Cake 1 cup very ripe diced papaya 3 tablespoons water 1 tablespoon baking powder 1/2 tablespoon salt 1/3 teaspoon cinnamon 1/3 teaspoon nutmeg 1/4 teaspoon mace 1/4 teaspoon ginger 1 1/2 cups flour 1/4 cup shortening 1 cup sugar 1 egg, well beaten 1 tablespoon lemon juice Stew diced papaya and water on the stove for 20 minutes, set aside. Sift together baking powder, salt, cinnamon, nutmeg, mace, ginger and flour. In a large bowl, cream, shortening and sugar until fluffy; add egg. Add flour mixture alternately with papaya liquid. Fold in lemon juice. Pour into a cake pan and bake for 45 minutes at 325-degrees. Printable version: papaya01.txt.
