French Pain d'Epices 100 ml milk 200 g honey 75 g light muscovado sugar 2 tsp bicarbonate of soda 300 g flour 1 heaped tbsp chunky orange marmalade 1 heaped tbsp chopped or candied orange peel 1 heaped tbsp candied lemon peel 2 tbsp blanched aLmonds, chopped (optional) 2 tsp aniseed 1 salt-spoon salt 1 salt-spoon ground cloves 1 salt-spoon ground cinnamon 1 salt-spoon ground ginger Heat the milk, honey and sugar without boiling it. Take out a tablespoon of the mixture and mix it into the bicarbonate of soda. Sift the flour and mix into the milk, honey and sugar. Stir in the bicarbonate and then the citrus, almonds and spices. Butter a 500g loaf tin and line with greaseproof paper. Spoon in the mixture and bake it in a preheated oven at 180C/350F/Gas 4 for 35 minutes or so. Remove from the oven and turn the cake out of the tin after ten minutes. When cool, wrap well and keep for a few days. Printable version: pain-depices.txt.
