Orange Date-Nut Cake Yield: 10 servings 1 c butter 4 c sugar, divided 4 lg eggs 4 c flour 1 ts baking soda 1 1/2 c buttermilk 8 oz sugared dates; chopped 1 c pecans, chopped, toasted 4 ts orange rind 1 c orange juice Preheat oven to 350F. Beat butter at medium speed until fluffy. Gradually add 2 sup sugar, beating well. Add eggs, 1 at a time, beating until blended after each addition. Combine flour and baking soda; add to butter mixture alternately with buttermilk, beginning and ending with flour mixture. Beat at low speed until blended after each addition. Stir in dates, pecans, and 2 teaspoons orange rind. Pout batter into greased and floured 10" tube pan. Bake for 70 minutes or until a wooden pick inserted in center comes out clean. Bring orange juice, remaining sugar and remaining rind to a boil in a saucepan; cook, stirring constantly, 1 minutes. Run a knife around edge of cake gently; punch holes in cake with a wooden pick. Drizzle glaze over warm cake. Let cool in pan on a wire rack. Printable version: orange-date03.txt.
