Orange Buttermilk Cake 2 large oranges 2 cup sugar 1 cup margarine 2 eggs 1 teaspoon baking soda 1 teaspoon baking powder 2 1/2 cup all-purpose flour 1 cup buttermilk 1 cup chopped dates 1 cup chopped walnuts Whipped cream Fresh orange slices or wedges for garnish Grate the orange rind. Halve oranges, squeeze juice into saucepan. Add 1 cup of the sugar. Add the grated rind to the butter. Add remaining sugar. Cream until soft and light using medium speed on mixer. Add eggs, one at a time, beat until light. Beat in the soda, baking powder and flour alternately with the buttermilk. Mix until smooth. Fold in dates and nuts. Turn into a lightly buttered 9x13 inch baking pan. Bake at 350 degrees for 30 to 35 minutes or until a wooden pick inserted in the center comes out clean. Meanwhile, bring orange juice and sugar to a boil. Pour boiling syrup over the hot cake as it comes out of the oven. Set cake aside to cool completely before cutting into squares.
