Seed Cake Preheat oven to 325 degrees Fahrenheit Cream 2 cups butter. Add slowly and cream well 2 cups sugar. Beat in, one at a time, 9 eggs. Add 1 teaspoon vanilla and 1/2 teaspoon mace, beat well. You may add 2 tablespoons brandy or 8 drops of rose water. Sift before measuring 4 cups cake flour. Resift with 1/2 teasppon cream of tartar and 1/2 teaspoon salt. Add the sifted ingredients slowly, at the lowest speed on a mixer, mixing only until the batter is thoroughly blended. Add 1/2 cup chopped nuts and then 2 teaspoons of caraway seeds. You may also add, or leave out 1/2 cup each of citron, candied cherries or 1 teaspoon grated lemon rind or 1/2 cup of shaved candied orange peel. Pour batter into greased and floured or parchement lined loaf pans. Bake about 1 hour. Printable version: nuns05.txt.
