MARASCHINO CHERRY CAKE
 
2 1/2 cups flour
1 1/2 cups sugar
1 tsp. salt
1/2 cup shortening
3/4 cup milk
1/4 cup cherry juice
1 tsp. vanilla extract
2 tsp. almond extract
4 unbeaten egg whites
18 maraschino cherries
1/2 cup nuts, chopped
 
Sift dry ingredients into a large bowl; add shortening, milk, cherry
juice, vanilla and almond.  Beat for 2 minutes.  Add egg whites
and beat again.  Add cherries and nuts and blend in by hand.  Bake
in greased and floured layer pans at 350 degrees for 25-30 minutes.
