Lemon Sponge 2 eggs, separated 1 Tbsp lemon zest 1/4 cup lemon juice 2/3 cup milk 1 cup sugar 1/2 cup flour 1/4 tsp salt Preheat oven to 350F. Beat egg whites until stiff peaks form, set aside. Beat egg yolks, blend in lemon peel, juice, and milk. Add sugar, flour, and salt; beat until smooth. Fold into egg whites. Pour into ungreased 1 quart casserole dish. Place dish in a pan of very hot water (1" deep) and bake 45-50 minutes until golden brown on top. Printable version: lemon-sponge02.txt.
