GUINNESS CAKE
 
4 eggs, beaten
1 lb. flour
1 lb. sugar
1.5 lb. dried fruit
1 tsp. baking soda
1/2 lb. butter
1/4 lb. cherries
1/4 lb. mixed peel
1/4 lb. almonds
a pinch of nutmeg or mace
1 bottle Guinness
1 lemon, juiced
 
Cut the butter into the flour. Mix well with the other ingredients
(except for the eggs, Guinness and lemon). Add the Guinness and
lemon juice and eggs.  Pour into an 8 inch cake pan and bake in a
slow oven for about three hours.
