Grapefruit Cake 125 g butter 125 g sugar 2 eggs juice and finely grated zest of 1/2 grapefruit 180 g flour 1 tablespoon baking powder 2 tablespoons warm milk Cream the butter and sugar together until pale and creamy then add the eggs one at a time, beating well after each addition. Stir-in the juice and zest of the grapefruit then add the flour, baking powder and milk. Pour into a well-greased ring cake tin and place in an oven pre-heated to 150C. Bake for about 40 minutes until the cake is set. Take out of the oven, allow to cool slightly then remove from its tin and place on a wire rack. Decorate with icing made from icing sugar, butter and grapefruit juice and zest. Printable version: grapefruit04.txt.
