Fruity Cake Yield: 10 servings 225 g sugar 225 ml milk 175 g butter 225 g dried fruit, such as mango, pineapple and apricots 400 g self raising flour Put the first 4 ingredients in a pan, bring to the boil and mix together, let the mixture cool slightly then add flour and mix thoroughly. Grease and line a 900 g loaf tin, pour in mixture and bake for 1 hour at 160 C / 325 F / Gas 3. Leave to cool, remove from tin and slice. Printable version: fruity.txt.
