Cranberry Coffee Cake 1/2 cup butter 1 cup sugar 2 eggs 2 cups flour 1 teaspoon baking soda 1/2 teaspoon salt 1 cup sour cream 1 teaspoon vanilla 1 16-ounce can whole-berry cranberry sauce 1/2 cup chopped nuts In a bowl, cream butter and sugar. Add the eggs and beat well. In a separate bowl, sift together flour, baking soda, and salt and add to creamed mixture. Place half the batter in a greased 10-inch tube pan. combine half a can of cranberry sauce with 1/4 cup nuts and ladle this mixture over the batter in the tube pan. Add remaining batter and cover with the rest of the cranberry sauce and nuts. Bake at 350 degrees F. for 1 hour. Cool and drizzle with bakers frosting. Bakers frosting 3/4 cup confectioners sugar mixed with 2 1/2 tablespoons or your preferred liquid, such as water, cranberry juice, cranberry liqueur, orange juice.
