Caramel Apple Cake 1 3/4 cups all-purpose flour 1/2 teaspoon salt 1/2 teaspoon baking soda 1/2 teaspoon baking powder 1 1/2 teaspoons ground cinnamon 1/4 teaspoon ground ginger 1 1/2 cups firmly packed brown sugar 3/4 cup butter, room temperature 3 eggs 1 teaspoon vanilla extract 1 1/2 cups peeled, chopped apples 1/3 cup margarine 1 cup firmly packed brown sugar 1/4 cup milk 1/8 teaspoon salt 1/2 teaspoon vanilla extract 1 1/2 cups confectioners' sugar, sifted 1 cup chopped walnuts or peanuts In a bowl, combine flour, salt, baking soda, baking powder and cinnamon. Mix well with wire whisk. Set aside. In a separate bowl, combine butter and brown sugar. Mix with electric mixer until creamy; add eggs, one at a time, beating after each addition. Add vanilla. Slowly add dry mixture to this, mixing well. Fold in chopped apples. Pour batter into a greased 13 x 9-inch baking pan. Bake at 350 degrees for 30-40 minutes, until toothpick inserted in center comes out clean. Cool on wire rack. Printable version: caramel-apple01.txt.
