Cannoli Cake
Serves 12

1 cup milk
1/2 teaspoon orange extract, or 2 tablespoons orange liqueur or juice
4 serving size package instant vanilla pudding
1/2 cup ricotta cheese
8 squares semi-sweet baking chocolate, chopped, divided
10.75 oz package pound cake, slice horizontally into 4 pieces
1 cup cool whip

Pour milk and orange extract into large bowl.  Add dry pudding mix.
Beat with wire whisk until well blended.  Stir in ricotta.  Gently
stir in half of the chopped chocolate.

Spread 1/3 of the pudding mixture onto bottom slice of cake.  Repeat
layers twice, ending with top cake slice.

Micrwave remaining chocolate in small microwaveable bowl on HIGH
45 seconds to 1 minute or until almost melted, stir until completely
melted.  Stir in whiopped topping.  Spread evenly over top and sides
of cake.
