Butterless Cake 1 egg, separated 2/3 cup sugar 1/2 cup evaporated milk 1 cup flour 2 level teaspoons baking powder 1/8 teaspoon salt 3/4 teaspoon lemon extract Put egg yolk in a mixing bowl and beat until light; gradually add the sugar and milk while beating continuously. Sift flour, baking powder, and salt together; set aside. Beat egg white until stiff; fold dry ingredients into egg white. Add egg white mixture and flavoring to sugar-milk mixture, blending well. Pour batter in a prepared 8-inch square pan. Bake in a moderately hot oven (375 degrees) for 30 minutes. Top with Icing. Icing 2 tablespoons evaporated milk 1 cup powdered sugar 3/4 teaspoon lemon extract Warm milk in a small saucepan, and add flavoring and sugar. Tint icing with food coloring if desired.
