Banana Cake

3 brown eggs
1 teaspoon vanilla
1 teaspoon baking soda
1 1/2 cups canola oil
1 teaspoon lemon juice
3 cups all-purpose flour
2 medium-size bananas, mashed
3 cups sugar
1 teaspoon salt
1 small can crushed pineapple

Preheat oven to 350 degrees. Grease and flour bundt or tube pan.
Combine all ingredients in a large mixing bowl and beat for 3-4
minutes. Pour mixture into pan and bake for 1 hour. Allow cake to
cool completely and dust with confectioners' sugar if desired.
