APPLE UPSIDE DOWN CAKE 3 or 4 medium-size apples 1/4 c melted butter 1/2 c brown sugar Preheat oven to 350 deg F. Grease a 13 x 9 x 2" baking pan; line bottom with waxed paper and then grease paper. Pare and core apples; then cut into 1/4" thick wedges (about 2 cups). Pour melted butter in pan and sprinkle with brown sugar. Arrange apples, edge to edge, over sugar. 2 c sifted unbleached flour 3 tsp baking powder 1 tsp salt 1/2 c shortening, softened 1 c sugar 2 eggs 1 tsp vanilla 1 c milk Sift together flour, baking powder, and salt. Cream shortening with sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Mix in dry ingredients alternately with milk; add vanilla and blend well. Pour batter over apples. Bake 40-45 min. Turn cake upside down on a large cake plate or platter immediately. Serve warm with whipped cream. Printable version: apple-upsidedown03.txt.
