Cider Cake (England)
Makes 16 squares.

1/4 pint dry cider
8 ozs sultanas
4 ozs butter
4 ozs light soft brown sugar
2 beaten eggs
8 ozs plain flour
1 tsp bicarb of soda
 
Grease a 7" square cake tin. Put cider and fruit into a bowl and
leave to soak for 12 hours or overnight.

Cream butter and sugar together until pale and fluffy. Gradually
beat in the eggs, a little at a time, beating well after each
addition. Add half of the flour and the bicarb of soda and beat
thoroughly together. Pour over the sultanas and the cider and mix
well together. Fold in the remaining flour then pour into prepared
tin. Bake at 350F / 180C Gas mark 4 for about an hour, until well
risen and firm to the touch. leave to cool in the tin for 30 minutes.
Turn out on to a wire rack to cool. Cut up into squares.
