White Chocolate Bread Pudding 4 cups whipping cream 3/4 cup packaged dry bread crumbs 10 oz (300 g) white chocolate wafers 1 Italian roll, ~6 inches long 4 medium eggs, beaten 1/2 tsp almond extract 1 cup granulated sugar 1 tsp salt 4 oz white chocolate wafers 1 cup whipping cream Scald 3 cups whipping cream. Stir in bread crumbs, remove from heat and steep mixture for 20 minutes. Heat remaining 1 cup whipping cream. Remove from heat, add 6 oz (175 g) white chocolate wafers and stir until melted. Cut roll in small cubes (~3 cups) and stir into white chocolate mixture followed by eggs, almond extract, sugar and salt. Add the 3 cups whipping cream + bread crumbs mixture to white chocolate mixture. Fold in remaining 4 oz (125 g) white chocolate chopped into chunks. Pour mixture into greased 7-to-8-cup casserole and bake in a 300 F oven until set about 50 minutes. Cool then refrigerate until pudding is firm enough to cut in to 1 inch think slices. Serve with sauce. For White Chocolate Sauce: Heat 1 cup whipping cream with 4 oz (125 g) white chocolate. MAKES 6 SERVINGS. Printable version: white-chocolate02.txt.
