Bread Pudding

6 hamburger buns, broken into small pieces
6 eggs
1 quart milk
1/2 cup flaked coconut
1/2 can Coco Lopez
2 cups raisins
1 tsp. vanilla
1 cup sugar
1 tsp. baking powder

Combine eggs and milk, Coco Lopez, sugar and extract. Beat well.
Add raisins, baking powder, coconut, and bread. Mix gently. Pour
into a greased 9x13 baking pan and let stand for 30 minutes, for
the bread to soak up the liquid. Cook in preheated 325 degree oven
for 30-40 minutes or until center is done and there is no movement
when the pan is shaken.  Do not overcook.


Rum Sauce

1 quart milk
1/2 can Coco Lopez coconut cream
2 tablespoons vanilla
1 cup sugar
2 oz dark rum
1/2 cup corn starch

Mix first 4 ingredients in a large saucepan and heat till it comes
to  a boil. Stir 3-4 Tablespoons water into the cornstarch then add
it to the hot  milk mixture. Mix well. Cook about 3 minutes. Add
rum, stir thoroughly. Serve over Bread pudding.
