Orange and Chocolate Muffins 1/2 c. unsalted butter 1 c. sugar grated peel of 2 oranges 2 large eggs 1/2 c. sour cream 1/2 c. orange juice, freshly squeezed 1 tsp. baking powder 1/2 tsp. baking soda 2 cups all-purpose flour 3 oz. bittersweet chocolate, chopped into small pieces Heat oven to 400. Beat butter and sugar together until fluffy. Continue beating while you add the orange peel and one egg at a time, then the sour cream and orange juice. Measure baking powder, soda and flour; combine with chocolate. Add these and fold lightly into the wet batter. Fold only until well blended, then fill greased muffin tin. Bake for 20 min. or until done. Makes 10 2 1/2-inch muffins. Printable version: choc-orange02.txt.
