CHOCOHOLICS' CHEESECAKE MUFFINS 3 oz cream cheese 2 Tbsp sugar 1 beaten egg 1/3 cup cooking oil 3/4 cup milk icing sugar 1 cup flour 3 Tbsp cocoa 1/2 tsp salt 2 tsp baking powder 1/2 cup sugar In a small bowl, beat 3 oz cream cheese and 2 Tbsp sugar until light and fluffy. Set aside. In a large bowl, stir together flour, 1/2 cup sugar, cocoa, baking powder and salt. Combine egg, milk and oil. Add dry mix to wet mix until just combined. Spoon half of batter into prepared pans, put an additional 1 tsp cream cheese on muffin batter, top with rest of batter. Bake at 375F for 20 minutes. Dust with icing sugar.
