ZUCCHINI LEMON BREAD
Large Loaf

3/4 cups shredded zucchini                     200 mL
3/4 water                                      200 mL
3 tbsp vegetable oil                            45 mL
3 tbsp honey                                    45 mL
1 tsp salt                                       5 mL
1 1/2 grated lemon rind                          7 mL
1 1/2 cups Multigrain flour                    375 mL
1 1/2 cups white flour                         375 mL
1 1/2 tsp bread machine yeast                    7 mL

Select loaf size.  Add ingredients to machine according to
manufacturer's directions.  Select White cycle.

Variations: Replace Multigrain Blend with Whole Wheat Flour.

Replace lemon rind with orange rind.
