Rye Banana Bread (makes one 8.5" x 4.5" loaf) 1.5 C rye flour .25 C butter (optional) 1 C kamut flour 2/3 C honey, molasses or sorghum 2 eggs or eggs substitute 2 large, ripe bananas, mashed 1.5 C water 1 teaspoon vanilla .25 cup powdered milk 1 teaspoon sea salt (optional) 2 tablespoons baking powder Cream butter and sweetener together, add eggs and beat thoroughly. Stir in banana, water and vanilla. In a seperate bowl mix dry ingrediants, add dry mix to to wet mix and stir gently. Pour batter into an oiled 8.5" x 4.5" loaf pan. Bake at 325F for 50-60 minutes or until done. Cool slightly before removing from the pan. Printable version: rye-banana.txt.
