Recipe Archives->Breads Machine->Kaiser Rolls
Kaiser rolls 1 egg water to make 1 1/2 cups 1 1/2 tsp salt 2 tb sugar 4 cups all purpose flour 4 tb gluten powder 1 1/2 ts yeast Use dough cycle or a mixer with dough hook. Let rise triple in size. Punch down, form rolls, let rise triple. Score tops in a cross. Bake at 350 for 15 minutes. BTW, I let my dough rise in a very warm oven around 120F. Printable version: kaiser-rolls.txt.
