Dinner Rolls
1 cup warm milk (approx 110 degrees)
4 eggs, lightly beaten
1/2 cup butter, softened
1 Tbsp sugar
1/2 tsp salt
4 3/4 cups flour (bread machine flour works best)
1 Tbsp yeast
1/2 cup butter, melted, to brush on dough
The bread machine should be 2-loaf capacity. Be sure to add the
ingredients in the order listed.
Once the ingredients have been added, select the Dough cycle and
press the start button. Most machines mix the dough for 20-25 minutes
and let it rise for 1 hr. When the cycle is complete, turn the dough
out onto a lightly floured surface. Divide the dough into 2 equal
parts. Lightly flour a rolling pin and roll the first part into a
12" circle. Brush the entire round of dough with melted butter and
then cut into 8 equal wedges. Starting at the wide end, roll up
each wedge snugly and place tip-side down on an ungreased cookie
sheet. Repeat with second half of dough. Put in a warm place and
cover with a clean towel. Let rise for 1 hour. Preheat oven to 400
degrees. Bake for 12 to 15 minutes or until golden brown. Start
checking at around 10 minutes as some ovens cook faster than others.
