Thai Cucumber Mint Salad Yield: 4 servings 1 large English cucumber or 4 to 5 Kirby cucumbers, unpeeled and thinly sliced 1/2 medium red onion thin sliced 1/2 cup fresh chopped mint 1/4 cup fresh chopped basil 1/4 cup fresh chopped cilantro 1 Tbsp peanut oil 2 Tbsp rice wine vinegar 1 Tbsp sugar 1 Tbsp soy sauce 1 tsp Thai red chili paste (optional) 1/4 cup chopped peanuts Mix all and marinate 10 minutes before serving.
