Thai Green Chilli (Curry) Paste
Makes 1 small jar
 
4 Tbsp fresh green peppercorns
4 large chopped onions
8 finely chopped garlic cloves
1 tsp grated lime or lemon zest
3 tsp salt
2 tsp lemon grass powder
6 Tbsp finely chopped coriander
10 chopped green chillies
1/2 tsp ground turmeric
1 Tbsp ground cumin
1 Tbsp laos powder
1 Tbsp sesame oil
  
Using a food processor puree all the ingredients until completely
smooth.  Put the paste into a clean jar.  Seal tightly and store
in the refrigerator for 4 days.

When making your curry, always fry your amount of chilli paste
first to release the spice flavours.
