Khanom Mo Kaeng (Thai Taro-Coconut-Egg Custard) 1/2 cup taro root or cooked pea beans, well mashed 3 eggs 1 1/2 cup coconut milk 1/4 tsp salt 1/3 cup sugar Beat all ingredients together well and strain into a greased dish or individual custard cups. Place in pan of hot water and bake in 300 oven for 45 minutes to 1 hour, or until set. Printable version: taro-custard.txt.
