Indonesian Tomato Sambal 4 Tbsp oil 15 shallots, peeled and sliced 10 garlic cloves, peeled and sliced 14 large fresh red chilies, seeds removed and sliced 2 ripe medium-sized tomatoes, cut into wedges 2 tsp dried shrimp paste, roasted 2 tsp freshly squeezed lime juice Salt to taste Heat oil in a wok or pan and saute onions and garlic for 5 minutes over low heat. Add chilies and saute another 5 minutes, then add tomatoes and shrimp paste. Simmer for 10 minutes. Add lime juice. Put sambal in food processor and puree coarsely, seasoning with salt as needed.
