Cambodian Yellow Curried Pork Serves 4 1/2 tsp prabok (fish paste) mashed 2 tsp fish sauce 1/4 cup medium coconut milk 1 tsp yellow curry paste 1/2 cup ground pork 1/4 cup diced yellow onion 1/2 tsp sugar 2 Tbsp minced green onion, for garnish cucumber slices, sliced cabbage, bean sprouts, Thai eggplant mint sprigs, red chile Combine prabok and fish sauce in a small bowl and mash with a fork. Remove any bones. Set aside. In a skillet bring coconut milk to a boil. Add curry paste and cook over high heat until reduced by half. Add pork and cook until meat is nearly done. Add onion, sugar and prabok mixture and cook until thick (about 3 minutes). Transfer to a serving bowl. Serve with green onions and raw vegetable garnish to dip in the curry sauce.
