Spinach Cakes 1 can chopped or whole leaf spinach 2 cups mashed potatoes 2 slices American cheese, (crumbled) 2 oz grated parmesan cheese salt pepper garlic powder Italian bread crumbs In a medium bowl, mix potatoes, spinach, salt, pepper, garlic powder, grated cheese, American cheese, and bread crumbs. In a medium frying pan, heat 1 cup oil over medium heat. With spinach mixture, ake a patty a little smaller than a hamburger. Dip in egg and then bread in bread crumbs. Fry patty on each side until golden brown. Remove to a plate with a paper towel, let cool slightly. Eat warm. Printable version: spinach-cakes.txt.
