Cheesy Dijon Chicken Chunks 1/4 cup butter 1 clove minced garlic 1 tablespoon dijon mustard 1 tablespoon lemon juice 1 salt and pepper, to taste 6 boned and skinned chicken breasts cut into 1 inch pieces 1/4 cup fine dry breadcrumbs 1/4 cup grated Parmesan cheese, to taste 2 tablespoons chopped fresh parsley In large skillet over medium-high heat, melt butter; stir in garlic, mustard, lemon juice, and salt and pepper to taste. Add chicken and saute, stirring occasionally, for 5 to 10 minutes or just until chicken is tender and cooked through. In small bowl, mix together bread crumbs, cheese and parsley; sprinkle over chicken and toss to coat. Transfer to serving dish and serve warm; pass cocktail picks.
