Celery Root 1 celery root, quartered, trimmed, and peeled 1/3 cup mayonnaise dash sugar dash pepper 1 green onion, diced 1/2 teaspoon green bell pepper, finely chopped 3 tablespoons red wine vinegar Boil celery root in enough salted water to almost cover until fork tender, watch carefully. Cook and dice while warm (save cooking water). Mix mayonnaise with sugar and pepper. Add onion, green pepper and vinegar and stir until creamy. Combine sauce with celery root using the cooking water to thin it if necessary. Cool overnight or longer in the refrigerator. Serve using toothpicks. Printable version: celery-root.txt.
